Dinner in a Pinch

It’s been quite some time since I have posted a recipe. Life has been a little crazy lately, so my meals have not been extravagant at all.

I make cakes as a part-time job, and the past few weeks I have been gearing up to make the largest wedding cake I have made to date. The cake was for 170 guests, and consisted of 4 layers: 6″, 8″, 12″, 14″ cakes. I also made the flowers for this cake out of fondant, which is essentially a pliable sugar paste. It actually turned out a lot smoother than expected. I was able to make the cake in the evenings after my full time job just a couple days before the wedding. Making food items is always tough, because you want to make them as close to the date of use as possible, to ensure freshness.

Anyways, one of my meals that I did make during this time was super easy, and certainly satisfied my taste buds that were still desiring the extravagant foods. I made an herb breaded chicken that was already fully breaded and flavored. All I had to do was stick the chicken filet in the pan, and bake for 10 minutes on each side (this allowed for the crunchy coating to get crisp). To accompany the chicken, I made a super easy version of broccoli salad.  For this, I simply took a head of broccoli, and chopped it up into bite size pieces. I sprinkled shredded cheddar cheese on top, some bacon bits, and squirted ranch dressing all over it to give the creaminess.

My cooking style adapts to whatever my life circumstances are at that time. I love spending gobs of time cooking, but unfortunately,  most of us do not have lots of time to spend behind the stove, myself included. I am happy when I am able to come across simple dinner ideas, such as this one, that still provide a good quality, super tasty meal.

Herb Encrusted Chicken

  1. Cook according to package directions. Once cooked, drizzle ranch dressing on top of chicken if desired.

Broccoli Salad

  • 1 head of broccoli
  • 1/2 cup sharp cheddar cheese, shredded
  • 2 Tbsp bacon bits
  • 1/4 cup ranch dressing
  1. Stir all ingredients together in large mixing bowl. Serve with breaded chicken for dinner.
