9 Days of Cookies

Who would’ve thought this would become a thing. A cookie with more cookies in it. This recipe is a “cookie’s ‘n cream” cookie recipe. It is divine. And fluffy. And delivers a chocolatey oreo goodness encompassed in a vanilla sugar cookie.

This recipe uses something different than other cookie recipes. It uses an instant pudding mix. Instant pudding mixes contain cornstarch. If you remember from my post Here I explained what cornstarch does in a recipe and how it helps control the spread of a cookie. A pudding mix contains cornstarch, but lots of other stuff as well – sugars, flavors, add-ins, etc. It is not as controllable as straight corn starch, but it can yield a similar effect in terms of the spread of a cookie. The real reason pudding is added into cookies is mainly for flavor. Yes, I am sure many of you are thinking about pudding and moisture. That’s a common thing in the cake baking industry – pudding in the cake mixes, adding instant pudding to a cake recipe, etc. There is no real ingredient in pudding that allows it to add moisture. Moisture comes from wet ingredients and ingredients with fat – milk, oil, etc. It does not add moisture to cookies. But don’t worry, the flavor and extra bulk from ingredients certainly make it delicious!

Cookies ‘N Cream Cookie


  • 1 cup of butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1/2 of a 5 ounce box of Oreo pudding mix
  • 2 1/4 cups of flour
  • 1 tsp baking soda
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup dark chocolate chips


  1. Heat oven to 350. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream butter and sugars until light and fluffy.
  3. Add in eggs, one at a time until well blended.
  4. Add in oreo pudding mix, flour and baking soda and mix until just blended.
  5. Stir in by hand the chocolate chips.
  6. Scoop 2 tbsp for each cookie and place 2 inches apart on baking sheet. Bake for 10-12 minutes, or until edges are golden brown. Cool on cookie sheet for 5 minutes before removing to cool completely on a wire rack.
